Did you ever felt guilty eating chocolate ? What about doing it for health reasons ? When Sulpice Debauve founded its chocolate shop in 1800, first on Saint-Dominique street then in 1818 on des Saint-Pères street (his nephew, Antoine Gallais, was to join him in 1823), he build his success on specialties he called "health chocolates", which where dietary, almost therapeutic. He was formerly a physician (as was Gallais), which certainly helped.
Debauve & Gallais was the official supplier of the last 3 kings of France (Louis XVIII, Charles X and Louis-Philippe). In the previous century, he already gave its chocolates to the Queen Marie-Antoinette, who loved them.
Still a family-owned company, Debauve & Gallais has opened stores worldwide (for example in New York City, Tokyo, Beijing...) and has reach a cult-like status. Its black chocolates are 99% made of cocoa.
